Observation (CORRECTED DURING INSPECTION): Sink & surface cleaner sanitizer was not meeting the required concentration as per manufacturer's directions. It was measured less than 272ppm Dodecylbenzenesulfonic acid (DDBSA) and less than 704 ppm lactic acid. This was tested from the spray bottle and dispenser in the presence of two staff members. This was discussed with the Operator over phone as well.
Corrective Action(s): Staff setup 100 ppm chlorine sanitizer and re-sanitized dining tables during the inspection. Ensure to use either 100 ppm chlorine sanitizer or 200 ppm QUATS sanitizer to sanitize food contact surfaces, prep. surfaces, equipment, and dining tables until the dispenser can be re-serviced to dispense the sink and surface cleaner sanitizer at a concentration in accordance with the manufacturer's specifications. Correct immediately.

Observation: Dispenser for sink and surface cleaner sanitizer (active ingredients: DDBSA and lactic acid) was not dispensing sanitizer at a concentration required by the manufacturer's specifications.
Corrective Action(s): Repair or re-service the dispenser so that it dispenses sink and surface cleaner sanitizer at the concentration in accordance with the manufacturer's directions: 272-700 ppm DDBSA and 704-1875 ppm lactic acid; Correct within 1 week and contact the district Environmental Health Officer for a follow up inspection. In the interim, ensure to use either 100 ppm chlorine sanitizer or 200 ppm QUATS sanitizer during operation.

Dishwasher final rinse chlorine sanitizer was at least 50 ppm at the plate level.
2-compartment sink and sink unit with an overhead sprayer were operational.
Refrigeration units were at or below 4 degrees C.
Freezer units were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
No signs of recent pest activity were present at the time of inspection.
