Observation: Small defrost cooler - food and air temperature above 40F. Measured about 44F (6C).
Correction: Store potentially hazardous food, including defrosted food, at 4C (40F) or colder. Check temperature again in 1 hour and move to walk in cooler if temperature requirements are not met.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Tongs washed and sanitized daily. Self serve spoons for condiments washed and santized every 2 days.
Correction: Wash, rinse, sanitize, and air dry all utensils more frequently. Provide copy of your corporate sanitation plan to Fraser Health.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Hot water was measured at about 30C at the triple sink and 90F (33C) at the hand sink.
Correction: Provide a minimum of 38C hot water for hand washing and about 45F for utensil cleaning.
Comments

Follow up inspection.
All items from previous routine inspection have been corrected.
- Hot water is now above 38C at triple sink and hand sink. Cold water also supplied.
- Food Safe (equivalent) training certificate available - good.
- Food Safety Plan - is available. Check hot dog reheating temperatures in food safety plan (reheat quickly to 74C and hot hold above 60C is usually required).
- Small cooler repaired - 1-4C measured inside of the cooler.
- Sanitation Plan - washing and sanitizing utensils every 4 hours.
- ***Continue to improve cleaning. Remove any unneeded items and clean floor regularly.
