209 - Food not protected from contamination [s. 12(a)]
Observation: Found uncovered containers of food (soup, chili) found int he walk in cooler. The foods were 4C and ladles were found in them. Uncovered food could become contaminated with debris falling into it.
Corrective Action(s): Immediately place a lid or saran wrap on the container to cover the food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris, grease and/or dust found accumulated on surfaces. Food and grease will attract pests, and dust could fall into food. The surfaces/areas that had food, grease and/or dust on them were:
1) Exhaust canopy and filters had grease and dust. Service sticker stated it was to be cleaned in July 2020.
2) Floor beneath the cooking equipment (flat grill, chargrill, gas range) had grease.
3) Ceiling tiles around air diffusers had dust.
4) All upper walls, along the perimeter of the ceiling, had dust.
Corrective Action(s):
1) Immediately call a professional company to clean the exhaust canopy and filters.
2) Immediately wash and sanitize the floors. This must be done daily, especially at the end of the day to remove all food and grease.
3) Wash the ceiling tiles and upper walls to remove the dust. Ensure this is done weekly or at least twice a month.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: There are burned out light bulbs in the dry storage area. The light level is low, which makes it difficult for staff to see spilt food and to properly clean the floor and racks in the area. This will attract pests.
Corrective Action(s): Immediately replace all burned out light bulbs with working ones.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -19C or colder; hot holding unit above 60C; thermometers present; and temperatures recorded.
- High temperature dishwasher had rinse cycle temperature of 72.8C at the plate's surface, as per max/min thermometer. Temperatures recorded daily.
- Quats sanitizer was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; majority of foods covered (other than those mentioned); foods stored in designated groups and on designated shelves; raw proteins stored separately or on the lowest shelves below RTE foods; and foods stored 6" off the floor.
- No expired foods found for sale. FIFO rules being followed.
- General sanitation level as satisfactory. Improvement needed in the mentioned areas.
- No signs of pests.
- FoodSafe certified staff present.
- COVID-19 plan in place and the measures are: masks worn by staff; increased cleaning of surfaces; health screening done twice a day (prior and mid-shift); full service dining done, no self-serve stations; sick policy has been enhanced; increased hand washing; hand sanitizer available to staff and residences; and social distancing markings found on floor for residences.
- Discussed inspection results with the head chef, no signature obtained due to the pandemic.
