Observation: The final rinse gauge on the dishwasher read 75 C, when it should be 82 C
Corrective Action(s): The final rinse at the plate was 73 C, rinse gauge may need to be recalibrated or replaced to ensure it is reading the correct temperature of the rinse water.

Comments

- Coolers were 4 C or colder
- Freezers were - 18 C
- No hot holding at time of inspection
NOTE: temperature logs indicate cooler in upstairs kitchen has been sitting above 40 F/4 C on a few days this month. Cooler was adjusted during inspection to ensure cooler remains below 40F/4C at all times.
- Hand sinks had liquid soap, paper towel, hot and cold water
- Spray bottles had 200 ppm quat
- Main kitchen dishwasher had a final rinse of 196 F on gauge and 80 C at the plate.
- Auxiliary kitchen dishwasher had a final rinse of 73 C at the plate.
- No signs of pest activity noted during inspection, pest control devices are in place
- General sanitation is satisfactory.
