Observation: High temperature dishwasher not currently in use, due to plumbing repairs conducted onsite.
Corrective Action(s): Resume use of dishwasher to clean and sanitize baking trays upon completion of plumbing work.

Ensure trays are manually cleaned and sanitized until dishwasher function is restored as per the following method:
4 step method; 1)clean surface of debris using warm water and detergent,
2)rinse surface with warm water,
3)immerse for 2 minutes or apply surface sanitizer solution (200 ppm Quaternary Ammonia)
4)allow surface of item to air dry before next use.
