Observation (CORRECTED DURING INSPECTION): Cold donair meat stored in hot holding units without reheating and internal temperature of meat registered at 33 C.
Corrective Action(s): All cold foods must be reheated to 74 C quickly and then placed in hot holding unit.
Operator stated meat was taken out of cooler approximately 30 minutes ago. Operator was instructed to reheat on the grill and then place meat in preheated hot holding unit.

Routine Inspection
Hand washing sink equipped with hot/cold running water, liquid soap and single-use towels.
Coolers at 4 C or below.
Freezer at -18 C or below.
Gravy hot held above 60 C.
Manual dishwashing - not set up at the time of inspection, operator was able to describe correct dishwashing procedures.
Surface sanitizer available in spray bottles and in buckets throughout establishment - registered between 200-400 ppm.
No signs of pests at the time of inspection.
