Comments

- Operator prepares/cooks a variety of mexican foods (tamales, tacos, sopes) at commissary kitchen for service at special events and markets etc. Operator also prepares/serves food for catering. Operator is no longer preparing pre-made packaged meals.
- Contract/agreement in place with YVR Prep for 10hrs per week at this time which may increase.
- Operator preparing tacos and tamales at time of the inspection which will be transported in cambro unit to event.
- Station #2 in use in main kitchen at time of inspection
- Handsink accessible to station supplied with hot and cold running water, liquid soap and paper towel
- High temperature dishwasher operational. Final rinse at 71.9C at dish surface.
- Quats sanitizer in spray bottle present at station. Concentration measured 200ppm.
- Food stored in manner to prevent contamination (ie. wrapped/covered)
- Equipment maintained in a sanitary condition.
- Walk-in cooler 2C. Portable insulated coolers present and chilling prior to transport.
- No food storage in freezer at time of the inspection
- Operator holds foodsafe level 1 certificate.
