-The main production floor area next to the dishpit is roughened concrete and uneven

-shelving in Walk-in cooler -some racks are rusted over or caked with grime and food debris
--> clean and sanitize thoroughly hard plastic liners may be used
-Remove protective tape on the stainless steel surfaces
