Observation: Prep cooler observed at range between 8.5 C and 10 C. Left unit undisturbed for 15 minutes with motor engaged, but without any change in temperature. Also observed the thermometer in the unit was broken so no way to monitor unit effectively.
Corrective Action(s): Remove all potentially hazardous foods from this unit and store in alternate unit until serviced. Service unit immediately. Purchase working thermometer for this unit. This must be completed by follow up inspection date noted on report.

Observation: Bags of bulk food left open and exposed to contamination. Storage containers must be used for all food products. Ceiling tiles displaced exposing unclean ceiling cavity, also the ceiling and air exchange vents very dusty exposing food to potential contamination.
Corrective Action(s): Storage containers must be used for all bulk food storage in this area. These containers must be kept off the floor or consider purchasing containers on wheels. The ceiling tiles must be in place and ceiling cleaned free of dust build up. All must be done prior to re-inspection date noted on report.

Observation: Stagnant dirty sludgy water observed under dishwasher, behind and around chemicals and under upright cooler and freezer. Floor was observed dirty in several places behind and around food storage containers.
Corrective Action(s): The entire back area of premises requires cleaning and improved organization. This must be completed by follow up inspection date noted on report.

**At the time of inspection the quats was being used for dishwasher sanitizer. MUST BE CHLORINE! This was switched during inspection.
**Sink at end of prep station is not operational. Fix and get into use.
Check staff for foodsafe training if left to man the store without supervision.
