Observation (CORRECTED DURING INSPECTION): The following items from the front reach in display cooler were probed and discarded due to time (>4 hours) and temperature abuse (>4 degrees C):

Observation (CORRECTED DURING INSPECTION): (REPEATED VIOLATION) Sanitizer concentration was not detected from a red pail of QUATS sanitizer. Operator replenished QUATS sanitizer at this time. Ensure the pail is time tracked.

Observation: Observed a flattened cardboard box used to line the shelf for storing sub breads.
Corrective Action(s): Remove cardboard box. All surfaces must be easily cleaned and sanitized. The operator planned to install a shelving unit for breads. Correct this by: July 16, 2021.

Observation: Front display cooler for drinks (milk, pops, juices, etc.) and dessert was ~4 degrees C towards very back but ~12 degrees C in the front.
Corrective Action(s): Do not store potentially hazardous foods (PHFs) in this cooler unless it is serviced, and is able to keep foods at 4 degrees C or below. You may use this cooler just for non-PHFs such as pop.

(after correction) QUATS sanitizer noted at 200 ppm as per test strips. Test strips available on site
3 compartment sinks used for manual dishwashing.
Washroom facility in a sanitary condition
In-use utensils stored in a sanitary manner
In-use wiping cloths stored in a sanitizing solution
