Observation:
Ventilation canopy baffles require cleaning as there is accumulation of grease, dust and debris. Cleaning is also needed on the top and sides of the outer panel of the canopy.
Corrective Action(s):
Clean baffles, top and side panels of the ventilation canopy. A greasy and dirty canopy may potentially lead to a pest issue, contaminate food and become a fire hazard.

Observation:
Wooden shelving in walk-in cooler is deteriorating and difficult to clean.
Corrective Action(s):
Replace shelving in walk-in cooler with wired shelving that is easy to clean.

Follow-up Inspection:
- Cleaning has improved in facility for storage areas.
- At the time of inspection, service technicians were working on a leak under the dishwasher.
- Heavily stained and greasy ceiling panels have been replaced with new ones in the kitchen, making lighting much brighter as well.

Continue working on sanitation of the facility. Review your sanitation plan with the entire staff and ensure appropriate cleaning is done daily, weekly and monthly depending on the item/area to be cleaned.
