Observation (CORRECTED DURING INSPECTION): Perishable foods (meats, cheese, chopped vegetables, etc.) were stored in the main prep cooler and desserts in the dessert cooler at approximately 10°C/50°F for less than 4 hours.
Corrective Action(s): Move all perishable foods not needed immediately for service to a working cooler. Remaining perishable foods must be discarded after the 4 hour mark. Store just enough perishable food in the main prep cooler to use within a 4 hour period.
