Observation (CORRECTED DURING INSPECTION): 1) Tofu was stored above 4 degrees C internally (between 10.3 to 10.9 degrees C). Tofu was stored in this unit for more than 2 hours (from a few days ago) according to staff member. Cooler below it had a cover over it that may limit proper air circulation of cold air. Staff member mentioned that they would store the tofu in another display cooler at or below 4 degrees C in the future or that they may discontinue this product.
2) Top cartons of eggs that were stacked had a surface temperature near 6 degrees C in the front display cooler.
Corrective Action(s): 1) Staff member discarded the tofu at the time of inspection. Make sure tofu is stored at or below 4 degrees C to prevent potential bacterial growth in this cold potentially hazardous food and monitor the refrigeration temperature every 2-4 hours. Do not store tofu in a stacked condition as this most likely limits proper air circulation to the product.
2) Staff member moved the top cartons of eggs into the walk-in-cooler to maintain them at or below 4 degrees C. Do not overstack egg cartons and ensure eggs are stored/displayed at or below 4 degrees C. Recommended: Obtain another display refrigeration unit with a door/cover to store the eggs and tofu at or below 4 degrees C.
