Comments

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer available at 200 ppm in several spray bottles, dispensing unit, and in 3-compartment sink
- Both walk-in coolers were below 4C. All other prep coolers, inserts, and display coolers were at or below 4C
- Freezers at or below -18C
- Hot holding cases were above 60C
- Temperature records well maintained
- Buffet area: Cold items were at or below 4C. All other hot items were above 60C.
- Food storage practices good
- General sanitation excellent
- No signs of pest activity noted

Reminder: Tongs used for serving hot food in kitchen restaurant must be washed and sanitized every 4 hours or sooner.
