Observation (CORRECTED DURING INSPECTION): Soup was stored at 55 degC. Temperature of crockpot was increased during the inspection.
Corrective Action(s): Ensure that soups are stored at or above 60 degC.

Observation: 1) Knives and pie scooper are stored in sanitizer. Knives are not rinsed prior to use, just wiped down.
2) Plastic containers are being used in some of the dry storage bins.
Corrective Action(s): 1) Store in use utensils in ice water or just a clean, empty container. Replenish the ice once melted. All in use utensils must be washed every 4 hours.
2) Replace the containers with proper scoops that have handles. Store the scoops with the handle pointing out.

Observation: Temperature records are not being maintained at the front of house. It is in the back of house.
Corrective Action(s): Start recording temperatures in the front of house as well.

Observation: Holes noted around plumbing under the 3-compartment sink and dishwasher; gaps noted on the floor outside the walk-in cooler.
Corrective Action(s): Fill the holes around plumbing as discussed. Seal the holes/gaps in the flooring outside the walk-in cooler. As noted by the pest control technician, fill the hole in floor.

Back walk in cooler is at 4 degC; Back walk in freezer is at -19 degC; upright freezer temperature is -15 degC (items in the freezer are frozen).
Dishwasher rinse cycle has 100ppm Chlorine
200ppm Quats sanitizer is available for use.
Orkin pest control is on a monthly contract.
At least one staff on-site has FS level 1 certification or its equivalent.
General sanitation satisfactory.
