301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Accumulation of food debris observed on the deli slicer.
2. Dust and food stain observed on the plastic knife rack. Some knives were stored in the crack in between the preparation table and knife rack.
Corrective Action(s): Clean and sanitize the aforementioned equipment and knives, especially the hard to reach areas for equipment. Knives must be stored in a proper food grade rack or container. Do not store knives in between cracks. Correct by: immediately.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Quats sanitizer spray bottle measured with less than 100 ppm quats sanitizer. Manager stated the sanitizer was being refill every couple of days.
Corrective Action(s): Discard and refill the bottle with 200 ppm quats sanitizer from the dispenser. Quats sanitizer concentration decreases over time and should be changed at least every 4-6 hours.

Observation (CORRECTED DURING INSPECTION): Tongs used to handle raw meats were stored on top of the meats.
Corrective Action(s): Store tong in food-grade container or racks away from any raw meat. The handle part of the tong has a higher risk of contaminating meats.

Routine inspection:
- Display, walk-in and stand-up cooler maintained at 4C or less.
- Walk-in freezer maintained at -20C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats sanitizer available from the dispenser.
- 3 compartment sink set up for manual dishwashing.
- Food storage practices satisfactory.
- General sanitation satisfactory.
- No pest activities observed at the time.
- Manager to provide temperature records at next inspection (records in head office).
- Ensure all food equipment is cleaned and sanitized after each use.
