Observation: Exhaust canopy observed with substantial grease build up.
Corrective Action(s): Manager stated exhaust canopy will be cleaned on Thursday. Once cleaned ensure the inside of the exhaust canopy is wiped down/cleaned on a regular basis ie weekly to prevent the build up/accumulation of grease so that it does not drip onto the cooking surface below.

Observation: Stoppers missing for 2 of the 3 sinks at the 3 compartment sink
Several bowls observed with chips. These were removed to be discarded
Corrective Action(s): Purchase stoppers as discussed as back up in the event of a failure of the dishwasher so that a 3 compartment manual warewash can be done.
Manager stated new bowls have been ordered. Ensure staff are checking utensils daily for potential damage and immediately discarding damaged utensils.
