Corrective Action(s): Thoroughly clean and sanitize all surfaces in the kitchen (eg. countertops, cutting boards, shelves, etc.)
Ensure all surfaces are frequently cleaned and sanitized to prevent accumulation of soil and debris.

Observation: Soiled rags containing food particles & residues observed at food preparation areas in the kitchen. Soiled rags are being used to wipe cutting boards and prep surfaces in the kitchen without use of cleaning/sanitizing chemicals.
Corrective Action(s): Provide cleaning and sanitizing solutions to all food prep stations in the kitchen.
Train all employees on the proper methods for cleaning and sanitizing surfaces.
Ensure cleaning and sanitizing solutions are used by food handlers to maintain their work areas.

Observation (CORRECTED DURING INSPECTION): Hand-washing sink in the kitchen (near dishwashing machine) is obstructed with a 4L plastic container in the basin.
Corrective Action(s): Obstruction removed at time of inspection. Ensure hand-washing stations are kept clear of obstructions at all times for access by food handlers.

Observation: 1) Rodent droppings observed on the floors/shelving in the back storage room (w/ the commercial mixer) and throughout the kitchen.
2) Live cockroach found on sticky trap behind the hot water tank.
Corrective Action(s): Thoroughly clean and sanitize the entire premises.
Remove all unnecessary equipment and clutter from the premises (to remove pest harbourage areas)
Clean and disinfect all surfaces where rodent droppings are found.
Contact a professional pest control company to provide pest control services.
Comply with all recommendations of the pest control technician to eliminate pest activity in the premises.
