Observation (CORRECTED DURING INSPECTION): One bleach sanitizer spray bottle had less than 100ppm chlorine.
Corrective Action(s): Bleach sanitizer must be maintained between 100ppm to 200ppm to properly sanitize food contact surfaces. To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon (2.5mL) of bleach in 1 L of water. Bleach was prepared at 200ppm at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Mandolin slicers were found to have food debris under the blade area.
Corrective Action(s): Ensure slicers are properly disassembled prior to washing and sanitizing to prevent potential cross contamination. Slicers were properly washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Scoops were stored inside ingredient containers.
Corrective Action(s): Ensure food scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoops were relocated at the time of inspection.

Comments

-Kitchen prep coolers were both at 4C (top and bottom).
-Kitchen upright cooler was at 4C. Door seals will require repairs.
-Kitchen under counter cooler was at 4C.
-Service area prep cooler was at 4C (top) and 2C (bottom).
-Beverage area upright cooler was at 4C.
-Kitchen area upright freezer was at -18C.
-Front area upright freezer was at -14C.
-Hot holding of soup and rice were greater than 60C.
-High temperature dishwasher had a final rinse temperature of 80C on the dish surface during the final rinse on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice machine was found to be clean and sanitary. Ice scoop stored in a sanitary manner.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until September 13, 2027.
