Observation (CORRECTED DURING INSPECTION): 1. < 10 PPM chlorine residual detected in the sanitizer container holding in-use wiping cloths.
2. In-use rice paddle was being held at room temperature in water.
Corrective Action(s): **Issues corrected at the time of inspection**
Operator discarded the previous sanitation solution and remixed the bleach sanitizer. 100 PPM chlorine residual detected.
Going forward, operator will be storing the rice paddle in an ice water mixture. Please ensure all in-use utensils are stored dried or temperature control (in ice water mixture or hot at over 60.0C). All in-use utensils must be changed out every 4 hours or whenever noted soiled.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C.
All freezer units were at -18.0C.
Hot hold units for soup and rice were being hot held at over 60.0C.
Proper storage hierarchy observed. Food stored protected.
No signs of pest activities noted during the inspection.
Facility's sanitation noted satisfactory.
High temperature dish machine was able to reach 186.0F at the rinse temperature gauge and 71.1C at the plate level during the rinse cycle.

A new undercounter refrigeration unit was purchased as per the initial inspection. However, new cooler was not able to maintain at 4.0C or below. Operator decided they do not need this extra cooler as the second front of house cooler was adequate - at this time, did not see an issue with this proposal and approval was granted by the temporary area inspector.
Note: Receipt for permit fee was unable to be delivered by mail to the operator. Receipt was brought to the operator in person and the mailing address was verified - no change required.
