Observation (CORRECTED DURING INSPECTION):
1) Meat cooler measured 12C. Meats themselves were placed in the cooler in the morning (some from frozen) and measured approximately 8C.
2) Side dishes cooler measured 6C; monitor this cooler to ensure that it is able to reach 4C within the hour
Corrective Action(s):
1) Remove all meats from this cooler and place it in working coolers
2) If side dishes cooler does not reach 4C, remove all side dishes and place them in working coolers. Have this cooler replaced.

Observation (CORRECTED DURING INSPECTION): Sanitizer not made up at the time of inspection in meat area.
Corrective Action(s): Ensure that surface sanitizer is available at all times when meat preparation is occuring. Solution made at the time of inspection. Use a 5mL unscented household bleach in 2.5L of water formula for a 100ppm solution.

Corrective Action(s): Staff stated delivery had just come. Ensure that the foods are stored inside while being sorted as it is raining outside and may contaminate foods.

- Back area is to be reorganized starting next week so that there is a clearer divide between meats and fruits/vegetables
- Meat slicer in use at the time of inspection; ensure that it is sanitized every four hours
- All other coolers measured 4C or colder
- Freezers measured -18C or colder
- Sweet potatoes measured 85C
- Have pest reports available for follow-up inspection next week
