Observation (CORRECTED DURING INSPECTION): 1. Stains observed on the inside of the ice machine. Operator stated the ice machine is cleaned every 2 weeks.
2. Accumulation of dust and debris on the 2 magnetic knife strip located near the grill and susi bar area.
3. Cups were stored with mouth piece side lining on reusable clothes. Reusable cloth is porous and can not be cleane and sanitized properly.
Corrective Action(s): 1. Clean and sanitize the inside of the ice machine. Discard the current batch of ice and the first batch after sanitizing. Increase the frequency of cleaning. Correct by: Immediately.
2. Clean and sanitize both knife racks and all the knivies stored on them. Develop a sanitation schedule for knife rack. Correct by: Immediately.
3. Cup liner must be made from food grade smooth, non-porous, easily cleanable materials, swtich the liners accordingly. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer not available at the time of inspection.
Corrective Action(s): Staff prepared 100 ppm bleach sanitizer in pail. Ensure wiping clothes are stored with the sanitizer when not in use.

Observation (CORRECTED DURING INSPECTION): Back ktichen hand washing station was obstructed with a garbage can and not easily accessible.
Corrective Action(s): Operator relocated the garbage can to a different location. Do not leave equipment / item in front of the hand washing station.

Observation (CORRECTED DURING INSPECTION): Frozen meats observed thawing at room temperature.
Corrective Action(s): Transer frozen meats into a functional cooler. Follow proper thawing procedure when thawing potentially hazardous food (under cold running water, inside functional cooler, microwave).

Observation: Rodent droppings noticed on the floor beside the grill and around the area near the dishwasher.
Corrective Action(s): Clean up the rodent droppings from aforementioned areas. All food products must be stored in tight-fit containers. Follow your professional pest control operator's instruction on remediation process. Correct by: today.
