Observation (CORRECTED DURING INSPECTION): Food debris observed on the meat slicer guard. This was cleaned and sanitized at time of inspection
Corrective Action(s): Ensure staff have been trained on how to properly clean and sanitize the slicer afer use. Flashlight is available ot check the cleaning.

Observation: School currently has a pest control problem with mice. Pest control contract is in place. Traps observed in place in kitchen. No droppings observed in the kitchen. Several openings observed and documented with staff that may allow entry of pests into the kitchen
Corrective Action(s): Continue to bin all food items that can potentially be chewed into.
Continue to barricade base of door entrances to the kitchen (At night) until permanent weather stripping can be installed. Seal all pipe openings as disussed

Comments

School currently experiencing a pest control problem with mice. Pest control contract in place. Perimeter of the school was walked to identify potential access points allowing mice to enter.Openings observed and documented at the base of several doors which are large enough to allow the entry of mice. Large openings in the base of exit doors were observed in the seating area adjacent to the kitchen. Until proper weather stripping is installed, steps should be taken at night to physically block these openings to prevent mice entry.
New wire rack shelving installed inside the walk in cooler and freezer.
Ice machine is clean
Dishwasher tested at 76c (At plate level). Soap dispensed into wash cycle. Final rinse pressure at 20psi
Monitoring logs being maintained.
