Observation: Build up of grease noted under 3 compartment sink by grease trap and at floor/wall transition in frying area. Pop syrup splatter noted on wall behind pop bib storage shelving.
Corrective Action(s): Thoroughly clean areas noted above to remove food debris and grease. Ensure cleaning frequency and detail of cleaning is such that grease and debris do not build up in hard to reach areas. Correction date: Sept. 21/17

Comments

-General sanitation of premises is satisfactory aside from hard to reach areas noted above.
-Handsink supplied with liquid soap and paper towel
-Quats sanitizer (200ppm) present in dishwashing sink for sanitizing dishes and present in multiple buckets throughout kitchen with wiping cloths inside.
-Walk-in cooler was 2C. Raw chicken was stored away from ready to eat items
-Walk-in freezer was at -12C
-Small prep cooler was at 4C
-2 door reach in cooler was 3C
-1 door reach in freezer was at -11C
-Henny Penny, KFC system hot holding units were holding gravy and chicken >60C
-Mashed potatoes and gravy being hot held in countertop hot holding unit at 63-66C
-No signs of pest activity at the time of the inspection. Pest Control contract in place with monthly visits.
-Manager present and has completed Foodsafe level 1 training.
*Piece of unsealed wood is immediately adjacent to ice machine. All surfaces in a food premises must be smooth and washable and therefore unsealed/unpainted wood is not suitable. Either paint/seal wood so that it is washable or remove piece of wood and replace with suitable material.
