Observation (CORRECTED DURING INSPECTION): Trays A and B of food warmer unit 40 C, 54 C respectively.
Corrective Action(s): To prevent microbial growth cooked potentially hazardous foods must be kept hot at 60 C or warmer.

Observation: Mouse droppings observed on counter behind coffee machine / beverage cooler and storage cabinets below, on floor of back kitchen by food warmer, under dry storage shelving, and around side exit.
Grease build-up under on floor underneath dishwashing sinks.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.
Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.
Premise sanitation must be maintained on a daily basis to discourage pest activity.
Pest control service must improve to identify potential harborage, rodent entry and sanitation issues contributing to pest activity and report to management on a regular basis.

Observation: Dishwasher unit and 3 compartment sink plumbing both have leaks, water collecting on the floor.
Floor under dishwashing sinks has a gap between floor finish and baseboard allowing grease to collect.
Corrective Action(s): Repair plumbing leaks as needed.
Repair floor beneath dishwashing sinks to allow for a durable, easily cleanable surface.
