Observation (CORRECTED DURING INSPECTION): The kitchen hand sink which near the three-compartment sink blocked by trays and greens in a strainer (stored on the top of the hand sink) at the time of inspection.
Corrective Action(s): Immediately. Remove trays and the strainer. The hand sink must be available all the time for proper handwashing.

Observation: No hot water at the kitchen hand sink which neat the three-compartment sink (Repeated violation/many times). Be inform that the violation ticket is going to be issued next time.
No cold water at the kitchen hand sink which near the dishwasher area. Also water is leaking.
Corrective Action(s): Today. Repair knobs. Hot & cold running water must be available/

Corrective Action(s): Immediately. Food must be transferred and stored in a food grade container with lid.
All food items must be covered.

Observation: A back door sealing ripped. A gap under the back door.

General sanitation - satisfactory.
Coolers (walk in,two preps, beverage upright, display) < or = to 4 C.
Freezers (walk in) at -18 C.
Handwashing stations supplied with liquid soap and paper towel in dispensers.
High temperature dishwasher at 76.6 C.
Note: It was low temperature dishwasher before.
Multiple dry storage areas - satisfactory/most dry food items stored inside plastic bins with lids/vegetables off the floor.
Surface sanitizer/Bleach solution (the kitchen and front) - available & at 100 ppm.
Staff washroom- clean; supplied with cold/hot water; liquid soap and paper towel.
Front hand sink - hot/cold water; liquid soap and paper towel - available.

Note: At the time of inspection, it found that one washroom door separated the front corridor and two washrooms (now connected to the kitchen).
One washroom which without a door - for staff use in the kitchen area; this washroom near the dough prep. area and rolling station now. Second washroom alternated for the dry storage area/toilet, hand sink, & liquid soap and paper towel dispensers are removed. Pallets for dry storage - available.

Be inform that all structural alteration to the business must be addressed and approved by the City.

Note: Fan hood is very dirty. Clean it as soon as possible (due day feb 21, 2020).
