Observation (CORRECTED DURING INSPECTION): Mold on the surface of the tomato sauce that was stored in the orignial can.
Corrective Action(s): Sauce discarded. Do not store sauce in tin cans.

Observation (CORRECTED DURING INSPECTION): Inadequate level of sanitizer for warewashing. Staff is not aware of the chemical dispensing system for dispensing sanitizer into the 3rd sink. No sanitizer for cleaning kitchen surfaces.
Corrective Action(s): Staff was able to manually dilute the quats solution during the inspection. Use this for sanitizing dishes and for wiping down food contact surfaces. Service the dispensing unit. Obtain bleach as an alternate sanitizer. Store all takeout containers and pots and pans upside down. Wipe down all counters at the beginning of the shift.

Corrective Action(s): Elimate pest infestations. Rodent traps noted. Ensure that the pest control company servicing the restaurant is aware of the ant infestation. Thoroughly clean the premises and organize storage.

Confirm that the containers (grey rubbermaid garbage can, black bus pans) are food grade or use other ones that are.

Correct all of the items by Friday morning. A follow inspection will be conducted.
