Observation (CORRECTED DURING INSPECTION): * Some staff in kitchen were found not wearing proper hair protection (eg. hair nets). Food handlers must wear proper hair protection when in kitchen and dishwashing areas to reduce risk of cross conatmination
Corrective Action(s): * Ensure all food handlers wear proper hair protection to reduce risk of cross contamination

* Dishwasher final rinse was 74'C/165'F or hotter internally after 3 full cycles(monitor dishwasher to ensure it maintains 74'C/165'F or hotter internally for each cycle)
* Cold-holding units were 4'C/40'F or colder
* Freezer units were -18'C or colder
* Food was covered and dated
* Sanitizer was available and found to be at 200 ppm quaternary ammonium concentration in bucket storing wiping rags; ensure all active working stations have adequate sanitizer easily available
* Note: reminder for food handlers to wear hair protection
* Note: some cleaning to be done under tables along back walls, etc
* Monitoring records were available and up to date
* Note: some repairs to painted walls to still be completed
