Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher not in good working order; chlorine sanitizer is not dispensed. Could not detect any chlorine at plate level after final rinse cycle
Corrective Action(s): Required operator to use manual ware washing methods to clean and sanitize all utensils. Most orders are takeouts and large catering orders. Operator must use 100-200 ppm of chlorine sanitizer to sanitize after washing and rinsing in the two compartment sink.
