General Comments
Just opened for the season yesterday. Grease trap changed. Fire suppression system serviced. New prep cooler purchased (with wood top). Cleaning of kitchen area beforehand.
All handsinks equipped with hot and cold running water, liquid soap and paper towel
Wiping cloths soaking in 200 ppm quats; bleach available for sanitizing as well
Low-temperature dishwasher achieved 50-100 ppm chlorine at the plate level upon final rinse cycle
All coolers operating at </= 4C
Freezers at </= -18C
Hot-holding just warming up during inspection
Temperatures monitored by staff
Pest-control contract in-effect. Attend premise ~3 weeks. Fly traps will be installed closer to spring/summer. No signs of pests observed.
General sanitation is good. Some attention needed at fry-cutting/pop station and staff bathroom (staff are aware and a plan is already in-place)
Food stored 6" off the ground, covered, with raw proteins below ready-to-eat foods. Foods labelled with dates.
