Reviewed foodhandling and dishwashing within sushi station - all food equipment and utensils will be returned to dishwashing station to be cleaned and sanitized through dishwasher or supporting sinks. Use of sanitizer has been revised. All sanitizer spray bottles and all wiping rag containers are filled with 200 ppm Quaternary Ammonia sanitizer solution. Back chemical feeder system tested to dispense 200 ppm Quaternary Ammonia. Bleach will now only be used to disinfect areas impacted by pest activity and in washroom areas. Premise cleaning has been completed. Mouse droppings not observed in previously impacted locations. Ensure daily cleaning is conducted to maintain premise sanitation in a consistent manner. Cooking line - left end handsink, faucet has been repaired and secured to counter top.
