Observation: Fruit/drain flies observed around dishwash station and front sink/ice machine areas. It is imperative to control food accumulations, especially sugar-based spills on a daily basis to control fruit flies (see violation 306) and reduce risk to food contamination.
Corrective Action(s): Continue to manage cleanliness and general sanitation as noted.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Front service area of the premises observed undermaintained in several areas (pictures). These include:
- Floor below beverage prep station and sinks, especially belwo and around syrups;
- Floor and area around and beside freezer (wires);
- Floor under ice machine (picture);
- Wall behind beverage shakers splattered with spills;
- Freezer - inside cavity and magnetic seal dirty to the point of mould growth present and observable;
**Floor beginning to show black discoloration in places, indicative of significant time accumulating.
The front area requires a complete clean-up AND improved commitment to sanitation moving forward to have any chance to control pest infestation and general sanitation to reduce cross contamination.
- Walk-in cooler floor, especially at "meat" shelf observed very dirty.
Corrective Action(s): See above for specific guidance on areas of premises requiring a good clean up.

Comments

Back area of the kitchen appears better maintained. It is cleaner and better organized. Front area of store needs work.
Note: Shelving in walk-in cooler, especially the "meat" shelving is rusting and paint coating is flaking away, making the shelves themselves difficult to clean and a risk to food contamination. Additionally, the interlocking design of the shelving makes movement for proper cleaning difficult. Plan for replacement and consider ease of movement when doing so.

Paper towels are not easily accessible for handwashing at front station. If not using dispenser they must be located at the handstation and not easily contaminated by water splashing around.
