Observation (CORRECTED DURING INSPECTION): Dishes and utensils run through the dishwasher were not being properly sanitized.
Corrective Action(s): The 2-compartment sink will be used with a 100 ppm bleach solution to sanitize dishes and cutlery until the dishwasher is fixed.. The bleach solution was prepared during the inspection.

Observation (CORRECTED DURING INSPECTION): The kitchen hand washing sink had a bowl of rice noodles stored inside and had containers of utensils underneath it.
Corrective Action(s): Do not store anything in or around the sink since it must be used for handwashing only and it must be accessible at all times.

Observation: Cleaning needed to remove food debris on shelves, on the floor and in hard to reach areas.

Observation: The dishwasher was dispensing 0 ppm chlorine. The sanitizer bucket was changed and the dishwasher was primed, and there was still no chlorine sanitizer being dispensed..
Corrective Action(s): A technician was called during the inspection. Follow up inspection required by Friday, September 10th.

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Bleach food contact surface sanitizer was at 100 ppm.
No evidence of pests. A pest control company comes on site regularly.
Discussed proper cooling for the soup broth.
