Observation: Observed walk-in cooler measuring above 4C ambient air temperature in walk-in cooler at 10C. Banana peppers at 9.3C when probed. Front prep cooler with veggies and sauces also measuring above 4C.
Correction: Ensure that cold potentially hazardous food is stored at 4C or below.
Food in prep cooler and potentially hazardous foods in walk-in cooler overnight discarded by operator.
Whole veggies, bottled drinks and items recently prepped moved to cooler at 4C or below.

Front veggies cooler unit outstanding - Ice packs and bags of ice placed in under veggies. Operator to fill inserts halfway and as needed.

Permit posted in conspicuous location. Ensure decal for 2023/24 placed on permit.

3 Compartment sink available for manual dishwashing and QUATs dispenser at ~200ppm.
QUATs solution in bucket at 200ppm.
