Observation (CORRECTED DURING INSPECTION): 1. Inner lid of pischachio crusher has an encrustation of dried debris.
2. No chlorine residual detected inside sanitizing pail in kitchen.
Corrective Action(s): 1. Pischachio crusher was cleaned and sanitized at time of inspection. All food contact surfaces must be in good sanitary condition after use.
2. Sanitizing pail was replenished with bleach and contained 200 ppm chlorine residual. Ensure that you always have chlorine residual to properly sanitize tables, work surfaces, equipment.

Observation: As stated in previous reports, walk-in cooler still contains items that are kept on the floor.
Corrective Action(s): Elevate all food products above the floor. This reduces the likelihood of contamination and facilitates routine cleaning of the cooler floor.

Observation: Rodent droppings observed underneath the mop sink, and behind the food storage bins inside the dry storage room.
Corrective Action(s): Remove rodent droppings with 1 part water, 9 parts bleach. Continue to work with your professional pest control company to identify any holes / entranceways. Remove unnecessary clutter in your facility and organize your items in the back storage room. Continue monitoring for rodent activity and maintain a high standard of sanitation.

Observation: Significant amount of clutter inside back storage room (formerly a large walk-in cooler).

Routine inspection conducted. Renovation has been completed in accordance with operator's revised floor plans.
Facility only offers ice cream and gelato
Dishwasher has been replaced by a three-compartment sink with drain board for cleaning and sanitizing machine components
Additional walk-in freezer has been installed at back of kitchen

Observations: (Main Kitchen)
- Walk-in cooler at 3C. Walk-in freezers at -18C
- Chest freezers at -18C
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Ice cream machine in use at time of inspection. Machine is sanitized at end of day with chlorinated sanitizer powder mixed into a solution. Ensure that manufacturer's directions are followed
- Area is generally in satisfactory sanitary condition
- Most food products are covered when not in use

Ice Cream Dispensing Area (Front):
- Hand wash station adequately stocked with hot/cold running water, liquid soap, single-use paper towels
- Stand-up freezers at -18C
- Rotary conveyor gelato display freezer at -15C
- Sanitizing pail present at 200 ppm chlorine residual *NOTE: All cloths must be placed in the sanitizing pail*
- Dipper well was in use for ice cream scoops
- Ice cream cones stored in secure glass drawer container

Back Storage Area:
- Chest freezer at -18C
- Cans of mango pulp stored at least 6" off the floor
