Observation (CORRECTED DURING INSPECTION): Found a veggie slicer left in an unsanitary condition. Dried on food debris found throughout machine
Corrective Action(s): Staff on site disassembled machine and began soaking to remove food.
Always clean your equipment after use. Do not let it sit long enough for food debris to dry on and become difficult to remove

Hand sink and 2 compartment sink supplied with liquid soap, paper towels, hot/cold running water
Walk in cooler at 3C
Dishwasher reached 73C on rinse cycle (greater than 180F on digital display)
Chest freezer (with poor seal) found at -15C. Please watch this machine as the broken seal will result in the machine working harder to maintain temperature
Bleach sanitizer found in rag bucket - good. Make sure there is always a bottle on site for use.
Food storage in pest proof containers. Discussed one bin of flour that had a large amount of spilled product in bottom of (garbage style) bin that must be discarded.
Donated sugar is to be kept in original bags, not a bed sheet.
General sanitation good
Small number of rodent droppings observed. Pest control company doing regular visits, but must be increased if rodent activity is noted.
**Emailed report expected by this evening. Will review tomorrow morning, as discussed.
**Due to the potential for rodent activity to increase, your cleaning - including food equipment - must be excellent. Pay careful attention to handles/ faucets/ garbage removal on a daily basis.
