Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (
1) (CORRECTED DURING INSPECTION) Quat sanitizer bottles and dispenser measured 0ppm quats.
2) According to the staff, the dishwasher is no longer used and equipment is being washed manually without a sanitize step.)
Comments

- Dishwasher reaches 73C at the final rinse cycle
- Equipment must be cleaned and sanitized in the dishwasher as the space does not allow for the three-compartment sink method to be used
- Temperature logs have been started; ensure that these are kept on site for review

Note: Ensure that the sanitizer solution comes through the tubing from the source bottle under the sink before filling your sanitizer bottles. Reminder that manufacturer's instructions state that quat sanitizer must be kept at 18-24C to be most effective.
