Observation (CORRECTED DURING INSPECTION): Cheesecake observed stored at room temperature during inspection. Staff volunatarily discarded cheesecake at room temperature and in cooler during inspection.
Corrective Action(s): Cheesecake is an unapproved menu item which is not approved for sale. Submit the updated food safety plan to the health inspector for review prior to serving any new menu items. Do not serve cheesecake until it has been approved for sale by the health inspector.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1. Bleach sanitizer is not available on site during inspection. Staff prepared fresh bleach sanitizer during inspection which measured at 200 ppm chlorine concentration.

2. Staff is not trained to clean and sanitize dishes using the 3-compartment sink. When asked, staff stated that dishes are washed with detergent, water and a sponge (no sanitizing step was mentioned).
Corrective Action(s):
1. Prepare fresh bleach sanitizer daily at a concentration of 100-200 ppm chlorine concentration. Obtain test strips to ensure staff are verifying sanitizer strength throughout the day to effectively sanitize food contact surfaces.

2. Staff was educated to clean and sanitize dishes and utensils using the 3-compartment sink method. Train all staff to ensure they are able to clean and sanitize dishes as per approved sanitation plan. Re-clean and sanitize all dishes and utensils on site immediately.

Observation: New unapproved food items observed on the menu during inspection (toast with different toppings and cheesecake).
Corrective Action(s): Submit an updated menu and updated food safety plan for all new menu items to the health inspector for review. Submit the plans within 1 week (by Dec 21). Do not serve any unapproved foods until the health inspector has approved the new menu items for sale. Failure to submit plans may lead to progressive enforcement action.

Observation: Staff on site does not have FOODSAFE Level 1 training or equivalent. One staff member stated that they have applied for FOODSAFE training.
Corrective Action(s): Submit invoice (proof of application for FOODSAFE training) for at least one staff member on site by the end of the day tomorrow. Ensure one staff member completes FOODSAFE Level 1 training within 1 month. Once completed, ensure staff keep a copy of their FOODSAFE Level 1 training on site. Ensure at least one staff member on site has FOODSAFE level 1 training or equivalent at all times in the absense of the operator.

Routine Inspection Conducted

Observations:
- 2-door glass cooler at 3'C
- Temperature logs are maintained on site - good!
- General sanitation satisfactory (with exception of violations)
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- Food is observed stored at least 6 inches off the floor and covered
- No signs of pests during inspection
