Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: 1) Prep cooler and standing cooler measured 15C ambient air temperature. All perishable foods measured above 4C. Tofu measured 17C, "pineapple sauce with soy" measured 13C, all vegan chicken nugget product at 15C, but product bag says keep frozen.
2) Unknown soy product left out at room temperature for thawing. Probed to be 15C. This is to be discarded as documentation showing shelf stability cannot be provided
3) Veggie spring rolls to be discarded as temperature below 4C cannot be achieved
Correction: Discard all perishable foods. Any mixture of prepared foods, cut vegetable, and products that state refrigeration required on packing are to be discarded. Date to be corrected: today

Observation: Wiping cloths stored in bucket of standing water. No bleach measured in bucket. Employee seen wiping cutting boards with wiping cloths stored in this water. All wiping cloths must be stored in 100ppm sanitizer solution
Correction: Remake bucket solution to 100ppm chlorine. 5ml per 2.5L of water. Date to be corrected: today
