Observation (CORRECTED DURING INSPECTION): Staff on-site indicated that in-use utensils are cleaned with detergent and water only and that the dough machine is cleaned with water only. Shelving used to hold sammon observed to have built-up of food debris (Pictures taken)
Corrective Action(s): Ensure all food contact surfaces are washed with detergent, rinsed with potable water, sanitized, and air dried. Educated staff and operator on-site on proper washing and sanitizing of food contact surfaces. Review facility's Sanitation Plan on overal sanitation of premises. Clean and sanitize shelving unis that hold samoon to remove built-up of food debris.

Observation: Operator informed that meat and vegetable samoon is being produced for retail sale which was not approved. Only plain samoon were approved.
Corrective Action(s): Cease the production and sale of meat and vegetable samoon. Only plain samoon are permitted to be produced and sold. Corrected by: Immediately.

Observation: Observed exposed wood trays that operator claims will be used to shelves samoon (bread).
Corrective Action(s): Seal exposed wood trays to ensure proper sanitation of food contact surfaces. Do not use to shelve food until it is sealed. All food contact surfaces must be non-porous, easily cleanable material. Corrected by: July 23, 2022 as indicated in report#JCHY-CFNQA2.

Observation: No chlorine-based sanitizer available to sanitize food contact surfaces and kitchen equipmment.
Correction: Obtain chlorine-based sanitizer to measure between 100-200ppm to sanitize food contact surface kitchen equipment. Corrected by: June 24, 2022.
Comments

Follow-up inspection conducted today for report#JCHY-CFNQA2.
The follow violations in report#JCHY-CFNQA2 have been addressed:
-All handwashing sinks are well equipped with hot and cold running water, liquid soap, and paper towels.
-Chlorine sanitizer spray bottle measured at 200ppm. Bleach (chlorine-based) available.

Consulted previous inspector, previous inspector informed that facility was not approved to store Zad Halal Market food. Observed boxes of frozen spinach in the 2 chest freezers. Do not remove boxes of frozen spinach from the facility until health approval is granted. Hold tags in place pictures taken.

Correction Order issued.
