Corrective Action(s): Ensure all dishware and food contact equipment run through the dishwasher is run through the dishwasher again once it is functioning properly and sanitizing at 71 C or higher at its final rinse cycle.

Observation: 1. Mechanical dishwasher noted at 67 C max. Also leaking water and spraying detergent out both sides of unit. Pooling of spilt water on the floor during operation.

Corrective Action(s): Ensure all equipment is functioning properly.
1. Ensure mechanical dishwasher is able to have a final sanitizing step of 71 C or higher. Unit should not be leaking water or chemicals while operating.
2. All faucets at sinks must be secured and not leaking.
3. All cooler units must be able to maintain at temp of 4 C or less.
