2. Ensure to clean up spillage when it happens and maintain walk- in cooler in sanitary condition

Kitchen: - Upright cooler (kitchen) #1 at 4C
- Upright cooler (kitchen) #2 at 4C
- Prep cooler at 4C
- Upright cooler (Hallway) at <4C
- Walk-in cooler at 4C
- All chest freezers at -18C or less.

Front service area:
- Display cooler at 4C
- Upright glass display cooler at <4C
- No hot holding during time of inspection

General:
- Chemical sanitizer buckets have 100 - 200 ppm chlorine / bleach concentration.
- Low-temperature dishwasher at 100 ppm chlorine (at final rinse)
- All food stored at least 6" off the floor.
- Foods kept covered and labeled during time of inspection
- Kitchen hood is observed to be clean.
- Washroom is equipped with hot / cold running water, liquid soap, and single-use paper towels
- No evidence of pests detected during time of inspection
- Operator has Foodsafe Level one certificate which will expire in 2022
Notes:
- Operator in process of removing all equipment that is not being used for business - GOOD
- Continue to organize and de-clutter facility
- Operator planning on adding more shelving, ensure to seal/ paint any raw wood if using wood materials
- Ensure that if any structural changes/ alterations are done to facility, contact Environmental Health Officer/ Health Department and submit appropriate plans.
