Observation (CORRECTED DURING INSPECTION): No food grade sanitizer were set-up during the inspection in the kitchen area.
**Issue corrected during the inspection** Staff were shown how to create a bleach sanitizer solution to be used on food contact surfaces when food is being prepared. 200 PPM chlorine residual was detected from that bleach sanitizer solution.
Corrective Action(s): Always have a bleach sanitizer solution prepared and ready to use whenever food is being prepared. Mix 2 mL of bleach for every 1 L of water for 100 - 200 PPM of chlorine residual to sanitize food contact surfaces.

Observation: Cartons of raw eggs stored on a shelf above ready to eat fruits in the upright cooler in the kitchen.

Corrective Action(s): Store the cartons of raw eggs on the lowest shelf away from ready to eat fruits and vegetables. All food must be stored in the proper storage hierachy to prevent potential cross contamination that may lead to a foodborne illness.

Observation: Gap more than the size of a pencil noted around the air conditioning unit by the 3-compartment sink.

Handwash station accessible, equipped with hot and cold running water, liquid soap and paper towel.
High temperature dish machine was able to reach 76C at the plate level during the rinse cycle.
Refrigeration units were ≤ 4C.
Freezer units were at ≤ -18C.
Sanitation and organization noted satisfactory at the time of inspection.
No signs of pest activities at the time of inspection.
A staff with FOODSAFE level 1 certificate was on-site at the time of inspection - expires June 29, 2023.
