Observation (CORRECTED DURING INSPECTION): Foods in Taco Bell prep cooler range between 9C and 12C. Prep inserts were supplemented with ice prior to inspection, however actual machine is malfunctioning

Observation: Taco Bell prep cooler measured at 18C internally (lower compartment). Top portion was being supplemented with ice at time of inspection.
Corrective Action(s): Repair this cooler. It must maintain a product temperature of no more than 4C both top and bottom.

Quat sanitizer spot checked in various rag buckets, and at dispenser - all measured 200ppm
Hot holding at Taco Bell station all >60C
Time stamps in use for all cooked and cold held items
Temperature monitoring records well maintained - since commencement of day (hot) and heating equipment all on, both prep coolers have begun to malfunction
**As discussed, you must supplement your prep coolers with ice to keep products at 4C or below. Have the above noted units repaired
