302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. 5 soiled knives (noted with grease and food debris) noted on the magnetic knife holder.
2. The highest tempeature that the high temperature dish machine was able to attain was at 67.8C at the plate level during the rinse cycle.
Corrective Action(s): 1. **Issue corrected at the time of inspection** Operator cleaned and sanitized the soiled knives and clean and sanitize the magnetic knife holder.
Magnetic knife holder should only hold cleaned and sanitized knives so they can be readily available when required. Food handlers must not place any dirty knives on the holder until they are clean to avoid contaminating the holder which may contaminate other cleaned knives.
2. This restaurant usually saves all their utensils and dishwares for washing in the afternoon when their cleaning team comes in. For now, do not use the dish machine and do not wash any dishes until the area Health Inspector comes back later today for a follow-up inspection. As per operator, he has scheduled a meeting with a chemical supplier that will be replacing their dishmachine today (meeting was scheduled before operator knew dish machine was not working).

Observation: Several containers of food were noted in the upright refrigerator units in the back of house with no protection/ cover/ plastic wrap.
As per operator, the food were being cooled.
Corrective Action(s): Wrap/ cover all food in the upright refrigerator units (you may cover the container loosely if cooling down). Operator must not leave these food overnight unprotected in the event there is any leakage/ spillage or potential contamination to the food.

Observation: 10+ mouse droppings noted below the dry storage rack and behind the stand mixer in the dry storage room.
Corrective Action(s): Clean, sweep and sanitize any areas noted with mouse droppings and alert your pest control company to help monitor and assist with the pest issue.
Date to be completed: Cleaning should be completed by today; Monitoring is ongoing.

Routine inspection conducted today:
Handwash stations, including restrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
General storage hierarchy satisfactory.
Improvements noted on the sanitary condition of the fume hood and deep fryers.
Sink & Surface Cleaner Sanitizer containers (2) were set-up. Concentration for both containers were at 700 PPM.
Operator (onsite at the time of inspection) still has a valid FOODSAFE level 1 equivalent certificate (exp. March 2, 2026).
