Observation (CORRECTED DURING INSPECTION): Mildew was found inside of the ice machine - in the water tray.
Corrective Action(s): The inside of the ice machine needs to be kept clean and maintained in a sanitary manner on a regular basis to prevent contamination of ice. Discard all of the ice and thoroughly clean the inside of the ice machine. Operator started discarding ice in preparation for cleaning at time of inspection.

Observation: Indian meal moths found in the back dry storage area.
Corrective Action(s): The indian meal moths could spread contamination and if left uncontrolled the infestation could increase in severity. Use sticky traps to control indian meal moths and monitor your dry food products for the presence of infestation by stored products pests. Most dry food products were stored in air tight containers, but reminded operator to ensure all dry products are stored in this manner to help control the infestation.

Observation: New wooden shelving is not smooth, impervious to moisture or easy to clean.
Corrective Action(s): Ensure the bare wood surfaces of the shelf is made smooth, impervious to moisture and easy to clean (e.g. paint). Bare wood surfaces may be difficult to clean thoroughly in the event of a spill.

Freezers were -18 degrees Celsius or less.
Hot holding units were over 60 degrees Celsius.
Food storage practices appeared satisfactory.
Organization of storage areas was satisfactory.
Staff hygiene and food handling practices appeared satisfactory.
Hand sinks were stocked with liquid soap and paper towels.
All sinks were equipped with hot and cold running water.
General sanitation was satisfactory.
Chemicals were stored in a safe manner.
Bleach sanitizer for in-use wiping cloths had chlorine concentration of 200ppm.
Low temperature dishwasher had a chlorine sanitizer concentration of at least 100ppm.
