Freezer at -16 degrees C.
Hot holding internal food temperatures at 60 degrees C or more.
Food is protected from potential contamination. Food is covered and labeled. Raw animal products not stored above ready-to-eat foods.
Proper thawing practices observed.
Probe thermometer available for internal food temperature checks.
In use utensils/equipment (e.g. slicers) washed and sanitized at least every 4 hours or sooner.
Hand sinks are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
