Observation: Ants trail under rack of dirty dishes.
Dishes are dropping crumbs onto this area.
Corrective Action(s): Call pest control, place ant traps in problematic areas.
Put a drip tray underneath racks to capture debris.
Clean all hard to reach areas underneath equipment to ensure no crumbs left to allow presence of ants.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Back prep area (donuts icing) hand sink P-trap is dripping onto mouse trap. Hand sink is also being used as a dump sink (ice coffee residue).
2. Sandwich prep area kick plate underneath line cooler - metal piece is falling off, crevace revealed and building up food residue, crumbs.
3. Coffee station (french vanilla) is dripping onto table, sealant is weak.
4. Underneath main front hand sink - some broken wood shelving piece and other food debris accumulation.
Corrective Action(s): Fix all areas to ensure no pooling water, drinks or build up of food residue.

Comments

Hand wash station supplied with liquid soap and paper towels in dispensers.
Staff washroom is also fully supplied for hand hygiene.
Fridges <4C.
Freezers <-18C.
Dishwasher high rinse sanitizing max temperature >71C (76.6C).
Sanitizer was refilled during the inspection at the front, >200ppm Quats.
Sanitizer bucket at back prep station also >200ppm Quats.
Please ensure at minimum sandwich station sanitizer is filled at all times.
Rice Pilaf hot holding 57C during the inspection, but very low quantities left, operator changed and reheated product to acceptable reheating and hot holding. Monitor this every 2hrs. Other hot holding items such as sausages and eggs >60C.
Dry storage areas are tidy.
Floors need cleaning to ensure no issues with ants. Operator was reminded and provided instructions to staff to clean during the inspection, thank you.
