Code 302 noted on Routine inspection # JSAS-AG6SGJ of Nov-29-2016 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (3 soiled wiping rags left on counter tops with no detectable sanitizer residual. Ice chest stained black with mold growth. Juicer stored with build-up of food debris. Staff on duty unable to demonstrate working knowledge how to clean and sanitize dishware and food utensils as per the 3 step method.)

Comments

Food utensils no longer stored in stagnant water when in use. Wiping rags stored in dilute bleach sanitizer solution at time of inspection. New ice chest cooler provided, in sanitary condition. Juice stored in sanitary condition, free of food debris. Reviewed 3 step manual dishwashing procedure, operator able to demonstrate correct method. Reviewed handwashing procedure with operators.
