* It is recommended to use a "maximum-minimum" recording probe thermometer for checking final rinse temperature of the dishwasher as
the in-built temperature gauge fluctuate widely.
* Do not use red cutting boards for preparing or cutting ready to eat meats such as ham or deli meats. Red colored cutting boards must only be used for raw chicken or meats.
It is recommended to use white boards for ready to eat foods.
* Ensure that all spray bottles of bleach sanitizer are made fresh every two days as chlorine bleach sanitizer dissipates over time.
* Ensure to monitor and record the quats sanitizer ( Oasis 146) concentration at the dispenser, at least once a day.
